Phillipston was first settled by Europeans in 1751 and in 1786 it was incorporated under the name Gerry after Vice President Elbridge Gerry. The area of the town was formed by taking portions of neighboring towns, Athol and Templeton and combining them into one. The name was changed from Gerry to Phillipston in 1814 as a tribute to Lieutenant Governor William Phillips.
Phillipston has never been a heavily populated area, which is reflected by the population of less than 2,000 in town. During the nineteenth century, much of the industry in town was based around mills, which included a cotton and a wool mill. Today, Phillipston has become a bedroom community. With great access to major highways nearby, Phillipston is a small but growing community.

The most popular recreation spot in town is Red Apple Farm, which is much more than just an apple orchard. After opening in 1912, the farm has been family operated for four generations. Among the activities on the farm are apple picking, food stands, a hay ride, a petting zoo and potato picking and pumpkin picking. The farm is also home to the oldest commercial apple tree in New England, which was planted when the farm opened in 1912.
